coffee, you need three things: high altitude, shade and experience.
Green Parrot Coffee is grown at high altitude, bathed in the cool mists of the
cloud rainforests of Honduras. Our coffee plants are carefully
cultivated beneath the broad leaves of mahogany trees and other
hardwoods which provide just the right combination of sunlight and shade.
When the coffee is ripe and the beans are at their peak in rich flavor, they
are hand-picked by the gentle Honduran people living in these
mountains. After the coffee has been washed and sun dried, it is
hand-selected and roasted to perfection by the Paz family who pours
three generations worth of tradition, knowledge, and expertise into every cup.

Coffee
Farm Development Achieving a high quality bean
begins with the variety of coffee selected and the manner in
which the nursery is managed. Green Parrot Coffee consists
mainly of the Catuai and Catimor cultivars, known for their
large fruits and seeds as well as their high cup quality.
Each year, a "vivero" or nursery is planted with the highest
quality of coffee beans carefully cultivated under optimal
conditions. Then, when the plants are the correct age, they
are carefully planted in the place of older, less producing
coffee trees. Using this method, Green Parrot Coffee is
constantly striving to improve its product's quality thus
enhancing with the passing of each year, our valued
customer's experience.

Organic and "Green" Friendly
There are many concerns regarding the
coffee industry and its impact on the environment. Although we are not
yet certified as organic or rainforest friendly we want our customers to know
that Green Parrot Coffee is in no way detrimental to the cloud rainforest in
which our fincas (farms) are located. We do not use chemicals of any
kind on our coffee plants neither for fumigation of insects, rusts or other
biological pests, nor do we artificially fertilize. Our coffee fields
are maintained by hand. About every three months or more often if needed
depending on rainfall, field workers mechanically clean the fields with
machetes and remove diseased or insect infested plants or coffee cherries.
We use only chicken manure and vegetable matter compost to fertilize our
coffee trees. Although we do sustain a considerable loss due to insect
damage, the economic loss does not compare to the actual costs associated with
chemically treating the farm. Coffee fincas provide a haven for many
types of tropical birds. On any given day at the farm, one can observe
many varieties of Amazon parrots flying freely among the tall trees which
shade our coffee. There are also Royal Mott Motts and Ora Pendulas.
Sometimes various types of toucans can also be observed eating the passion
fruit and other types of naturally occurring fruits such as bananas,
plantains, oranges and mangos. Our farms are also home to several types
of jeweled scarab beetles which are quite rare as well as other long-horned
beetles such as the harlequin beetle. As deforestation continues to rob
future generations of the exquisite experience and
pleasure of tropical nature, it is our desire to do
our part in the conservation of this natural gem
today and everyday thereafter.
